1/4 cup fresh basil, chopped
1/4 cup extra virgin olive oil
2 cups cherry tomatoes, halved
1/3 cup goats cheese
3 tablespoons balsamic vinegar
Salt and cracked pepper, to taste
Combine the olive oil, basil, salt and pepper in a bowl and add the goats cheese.
Cover and let it marinate for a few minutes in the refrigerator.
Add the tomatoes and balsamic vinegar to the cheese and lightly toss to combine.
Season to taste with more salt and pepper if desired and serve.
